~if you like eclairs....

...(is there anyone who doesn't?) you will love this eclair cake. I made it yesterday for my sister's birthday. It's a favorite with all, and is usually saved for special occasions.

Eclair Cake

Bring to a boil:

  • 1 cup water
  • 1/2 cup butter

Add:

  • 1 cup flour & mix well

Add:

  • 4 eggs; beating well after each egg

Spread on a greased 10" x 15" cookie sheet. Bake at 400 degrees F. for 30 minutes til golden brown. Cool.

VANILLA PUDDING FILLING:

  • 6 T. cornstarch
  • 8 T. sugar
  • 1/4 tsp salt
  • 4 cups milk
  • 2 tsp vanilla
  • 4 T. butter

Mix cornstarch, sugar, and salt with 1/4 cup milk. Heat remaining milk in saucepan over moderately low heat. Slowly add cornstarch mixture, stirring constantly. Cook for about 15 minutes after pudding thickens. Let cool a few minutes and then stir in vanilla and butter. Cover and let cool.

To cooled pudding, add:

  • 12 oz of softened cream cheese

Spread filling on cooled pastry.

Whip:

  • 2 cups heavy cream
  • sugar to taste

Spread whipped cream over the filling. Drizzle with chocolate syrup. Enjoy!

  2. That cake looks absolutely delicious! I used to make eclairs (the regular ones) when I was in high school French. My friend and I were always the ones to do the cooking.

    I will have to give this recipe a try - maybe on my mother's birthday in June.

  12. Boy does that look good!! Enjoyed looking at your blog, seems we have a lot of the same interests. I try and get to the thrift store a couple times a week and always seem to find lots of good stuff, don't know sometimes what people are thinking giving the stuff away. Well good for me anyway.It was fun looking at all your things. I get Romantic homes magazine too, just wish it was a lot bigger, I always finish it to fast.

    Oh goodness, that looks delightful!! And you didn't use a boxed pudding mix like I might have done (LOL) That part is even more amazing to me. Home made pudding. Not from a box. WOW!!!

  27. I'll have to try this recipe. I made your cinnamon roll recipe for my son's birthday brunch and they were fabulous!!! I can't believe I've experienced life for 50+ years and have not made cinnamon rolls from scratch, but your recipe inspired me to try and EVERYONE loved them.
