rhubarb time

I can't believe how the days are flying by ~ it's so wonderful to get outdoors again, and there is much to do! Everything is coming to life here - including the weeds :)
The weekend was spent weeding flower beds, trimming rose bushes, going to the feed store, driving an hour and loading up used brick {found on Craigslist}for a small patio area, biking, making homemade pizza, church, and cutting rhubarb...

Every spring the rhubarb seems to take me by surprise - I never quite expect it to be ready this soon. Yesterday I cut 4 pounds and used some for 'Dorothy's Rhubarb Cake'. Dorothy and her husband were neighbors of ours at one time--neighbors of the best sort. They were always bringing over something wonderful from their garden, from the most delicious raspberries to chrysanthemums from their flower beds. One day they brought us some rhubarb along with a cake recipe ~ it's simple, moist, and delicious. In case you would like to try it::
Dorothy's Rhubarb Cake
1 cup sugar {I use a bit less}
1/2 cup shortening {I use butter}
2 eggs
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp allspice
1/3 cup milk
2 cups rhubarb cut in small pieces
Cream sugar & shortening/butter til fluffy. Add eggs, mixing well. Combine flour, soda, & spices and add to butter mixture. Add milk and rhubarb pieces. Spread batter into lightly buttered 9x13 inch cake pan. Top with mixture of 1/2 cup sugar + 1 1/2 tsp cinnamon + 1 cup crushed walnuts.
Bake at 350 degrees for approximately 35 minutes.
Delicious served with some whipped cream!


{This time I made mine in a Bundt pan -bake about 40 minutes- and so my topping ended up on the bottom after turning the cake out--it was most delicious all the same!}

  1. That sounds awesome. I need t o plant some rhubarb, I don't often find it in the store and when I do it's ridiculously expensive.

    I remember my grandmother had a flowerbed that was absolutely overrun with it in the spring.

  4. I stew rhubarb using a recipe from Deborah Madison's Vegetarian Cooking for Everyone, and spoon plain yogurt over it, with granola for breakfast. Bliss! And I look forward to trying your recipe!

  7. Deb...It's mostly the weeds that have come to life here! As usual, our harsh Michigan winter has taken it's toll on some of the perennials...and what the bitter temps don't do in, the bunnies have a go at it! Nonetheless...I am not complaining. It is good to be outside w/o a jacket, mittens, scarves and boots!!!

    I just planted six rhubarb plants even thought the books say three is enough for a family. Not ours...

    I can't wait until next Spring when I can pick a little of it.

  10. I JUST baked a rhubarb cake too, using similar ingredients - I will be posting the recipe soon too :)
    Isn't it exciting to pull out fav recipes and using those special ingredients, such as fresh strawberries, rhubarb, etc, when they're finally in season! :) I was definitely waiting for the rhubarb, and finally here it is! I had the cake with ice-cream today, it was so good. :)

  15. Can you please help me with my rhubarb. I planted some last year and am new to rhubarb gardening. I've read that some never turn red, and it is possible I have the green variety. How do you know when it is ready to be picked? I have it on this post here: http://basketmasterweavings.blogspot.com/2009/05/around-house.html
    This photo was taken a few weeks ago and I've since cut back the flowers, but it has yet to turn pink/red. Thanks for any advice you can give me.

  17. Lovely! We just had rhubarb tonight - wrong end of the season for us but it was yummy nonetheless - I made a crumble but am looking forward to trying your cake - anything with rhubarb is on my favourite's list!

  23. The cake looks delicious. I have never bought, or cooked, rhubarb before. I have eaten rhubarb pie (not baked by me). I think it's time I expanded my experiences and got some rhubarb! ;-)

  27. mmmmm I usually go for the old standby Rhubarb and Cherry Pie or Rhubarb Crisp. This is a new one I'll have to try. Can you grow it in a pot I wonder (I have four legged critters).

  28. Oh how I love rhubarb but it's not always found in our local supermarkets. When I do get a hold of some, I will definitely try this cake, after I make my favorite--- rhubarb custard pie!

  32. Beautiful violets! We bought a house in the country last year, and I was delighted to find the property covered in them! I love that they're so tough but have such tiny flowers--perfect for a house with kids, dogs, chickens and goats :)
