skiing & cinnamon 'biscuits'




It is a rare day lately that we enjoy sunshine and blue
skies.  When it does happen, it's gratefully taken
advantage of by a little X-country skiing.
Mike & I headed out recently with Marley
across the fields and down the lanes
hoping to soak up a little Vitamin D.
Of course, all this exercise always makes
me hungry, and what could be better than a
tea time treat.

I love cinnamon buns and have a great recipe,
but I don't always want to wait for the dough
and then the rolls to rise; 
so I made some cinnamon 'biscuits' with my
They're quick to whip up and a very close
second to my traditional cinnamon rolls.
Everyone here loves them,
so if you'd like to try them
here's what I did...


Cinnamon Biscuits

2 cups flour
3 tsp baking powder
2 tsp sugar
1/2 tsp cream of tartar
1/4 tsp baking soda
1/4 tsp salt
1/2 cup butter, cold, in small pieces
3/4 cup buttermilk

2 tbsp melted butter
1/4 cup sugar + 1/2 tbsp cinnamon

Put first six dry ingredients in food processor, pulse; add butter and pulse til
coarse crumbs form.  Add buttermilk, pulsing until dough comes
together.  On floured surface, knead dough a couple times then
roll out to approximately 8" x 14" rectangle.
Brush dough with melted butter, then sprinkle with cinnamon & sugar combined.
Starting at 8" end, roll up as for a jelly roll.  Pinch to seal edge.
With sharp knife, cut in 8 even slices; place in greased muffin
tin or cake pan.
Bake at 400 degrees F for 15 to 20 minutes.
Drizzle with some icing if desired.
Best when warm from the oven!

    I just made these and they are amazing! I did drizzle some frosting over them since I think it's totally necessary :) I'm glad it only makes 8!
