August 20
After a lot of time spent in my sewing room lately to gear up for the craft show over the weekend, it's been nice this week to get back out in the garden, {admire the zinnias at sunset}, and catch up on some preserving.
There were a couple baskets of tomatoes waiting to be canned. I still have some Roma's I'd like to use to make pizza sauce.
The string beans are coming on strong, and besides freezing them, I decided to try making some dilly beans {the recipe is from my Ball Blue Book.} Since the cucumber vines have succumbed to the wilt, this seemed like a good way to use up the dill in the garden and some of the garlic I harvested. These are something new for us, and I can't wait to taste them.
Another new recipe I tried was a honey blackberry jam. According to The Ball Book, "in recipes without added pectin, honey can replace one-half of the sugar". I used some locally produced Basswood honey--it is very mild tasting and it gives the jam a wonderful flavor...I just had to try some on a fresh batch of hot biscuits.
I was hoping to find a few left-over crafts that didn't sell posted in your shop!! I hope you restock soon. :)

You will love the dilly beans! I have made those many times and they are always a family favorite. The honey and blackberry jam sounds wonderful!
ReplyDeleteJust a question...do you let your dilly beans sit for a certain length of time after canning, before eating them?...Deb
DeleteI love dilly beans and never make enough to last through the year. I have not tried honey in Blackberry jam but I think I will. It sounds wonderful. You photos are delightful.
ReplyDeleteYour photos inspired me to get busy with my own canning. But many times I will freez fruits and make jelly in the winter months or early Spring. I hope you had good sucess at the sale.
ReplyDeleteHave a good rest of your week!
Blessings, Roxy
