1 c. rolled oats
1/2 c. packed brown sugar
1 tsp baking powder
1/2 tsp salt
5 tbs butter
1/2 c. golden raisins {or sometimes I use craisins or dried cherries}
2/3 c. buttermilk
1 large egg
Combine flour, oats, brown sugar, baking powder, & salt. Cut in butter {I use my food processor} until mixture resembles coarse crumbs. Fold in raisins. Beat together buttermilk & egg, and stir into flour mixture til just blended. Press dough into a buttered 8-inch round pan. With knife, score top into 8 wedges. Bake 18 - 20 minutes in a 400 degree F. oven. Cool in pan on rack for 10 - 15 minutes. Serve warm.

I'm going to try those scones! I love the ones at my local coffee shop, cranberry and orange. I recently bought a package mix from a mill but they weren't all that good.

Ah, finally I run onto a recipe which sounds good and makes me want to immediately bake it, and I have all the ingredients on hand! That almost never happens for me. ;-)
ReplyDeleteActually, I'm out of golden raisins, but I do have regular ones, and I might even have some dried cranberries in the pantry. Either way, I'm making me some scones tonight!

ReplyDeleteEvery morning before I go to work I sit down and have a pot of tea and knit for a few hours. It's the most relaxing part of the day. No scones but maybe a biscotti or two but it's just my time.

I like the idea of posting your simple pleasures. I find a great deal of happiness in things like this, and often find that even the simplest vase of flowers, or arranging a pretty vingette of thrifted things can make me feel "away" for awhile.
