using up leftovers



Weekends are my time to bake up muffins
for the coming week.
They are packed in lunches daily
and eaten with smoothies for breakfast.
This weekend I had some leftover hot
cereal ~ a mix of steel cut oats and quinoa ~
which I always hate to see wasted...this
recipe is perfect for using up the leftovers
and is also a favorite here:

Oatmeal/Quinoa Muffins
{adapted from Laine's Oatmeal Muffin recipe*}

1 cup white whole wheat flour
1/3 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp allspice {or cinnamon}
1/2 cup vegetable oil
2 fresh eggs
1 cup leftover oatmeal ~ {I use a steel-cut oats/quinoa
mix which has one ripe banana mashed in it}
1 tsp vanilla
1/2 cup dried cranberries

Combine dry ingredients.  In another bowl, whisk together oil, eggs, vanilla, and leftover oatmeal, then add dried cranberries -- add to dry ingredients,
stirring until just moistened.
Fill ten muffin cups {grease pan or use paper liners}
and Bake at 350 degrees F for 18 to 20 minutes.

  1. I love this post, thank you for sharing. I also love to use up the left over seeds, and nuts from Christmas baking. Now is the time!! Maybe I will bake some of these this weekend. Love your blog, great inspiration. Do you think you will ever post how to make the drawstring bags??? They are awesome.

  2. I make one that's similar to yours. I just hate to throw away anything, especially warm steel cut oatmeal! My recipe that I sort of made up is very dense and heavy, but I kind of like them like that. Yours look delicious!

    hi deb....don't you just LOVE white whole wheat flour?! i've been using the king arthur brand as well, but i'm in the process of getting the dry container for my vitamix so i can grind my own hard white wheat berries (lots cheaper!).
    btw, i've been using the oil cleanser for a couple weeks now and LOVE it! my skin has never felt so good! thanks so much for sharing that with us.

  5. Nice recipe Deb, thanks. I've only come to quinoa recently so I'm still learning how to use it. I take it you mix the dry oats and quinoa together and then cook them for morning cereal?

    These look delicious! Is the white whole wheat flour a 50/50 mix? We can't get it here, but I could play around with a blend I guess. Thanks for sharing!
