Eclair Cake
Bring to a boil:
- 1 cup water
- 1/2 cup butter
Add:
- 1 cup flour & mix well
Add:
- 4 eggs; beating well after each egg
Spread on a greased 10" x 15" cookie sheet. Bake at 400 degrees F. for 30 minutes til golden brown. Cool.
VANILLA PUDDING FILLING:
- 6 T. cornstarch
- 8 T. sugar
- 1/4 tsp salt
- 4 cups milk
- 2 tsp vanilla
- 4 T. butter
Mix cornstarch, sugar, and salt with 1/4 cup milk. Heat remaining milk in saucepan over moderately low heat. Slowly add cornstarch mixture, stirring constantly. Cook for about 15 minutes after pudding thickens. Let cool a few minutes and then stir in vanilla and butter. Cover and let cool.
To cooled pudding, add:
- 12 oz of softened cream cheese
Spread filling on cooled pastry.
Whip:
- 2 cups heavy cream
- sugar to taste
Spread whipped cream over the filling. Drizzle with chocolate syrup. Enjoy!

ReplyDeleteThat cake looks absolutely delicious! I used to make eclairs (the regular ones) when I was in high school French. My friend and I were always the ones to do the cooking.

I try and get to the thrift store a couple times a week and always seem to find lots of good stuff, don't know sometimes what people are thinking giving the stuff away. Well good for me anyway.It was fun looking at all your things. I get Romantic homes magazine too, just wish it was a lot bigger, I always finish it to fast.
