a recipe

Claire has offered to share her summer fruit muffin recipe which some of you have requested. It works with any summer berry, fresh or frozen...I used fresh blueberries in my muffins, and they were very good!

{Claire's} Summer Fruit Muffins

makes 10-12 standard size.
10 oz flour
3 teaspoons of baking powder
4-5 oz fine sugar
1 egg
8fl oz milk (any sort coz I use soya. as my youngest has cows milk protein intolerance)
3fl oz vegatable oil or 3oz butter melted
5-6oz summer berries any mixture, it says fresh or frozen.

Prepare muffin tins, preheat oven 375-400 F 190-200C gas mark 6
In a large bowl sift together all the dry ingredients except for fruit.
Pour all wet ingredients into another bowl and whisk
Pour wet ingredients into dry ingredients and combine batter will be lumpy but no dry flour should be visible.
Gently fold in berries
Spoon into muffin cups bake for 20-25 minutes Enjoy!!
